M I N T

A lightly flavored mint cheesecake center is sandwiched between a delicious mint brownie crust and a mint chocolate shell.  Drizzled with extra mint chocolate stripes!  This is my latest creation and has quickly become one of my personal favorites.  Not too rich and not too minty!  A successful experiment and one I’m sure you’ll enjoy as much as I did!!

“Any Day” Cheesecakes

I am excited to introduce my new “Any Day” cheesecake!  This new smaller size cheesecake makes a great after dinner dessert or a nice weekend treat.  The “Any Day” cheesecake serves six average size pieces.  I will be offering this new smaller size in all my usual varieties.  Just pick your favorite and enjoy! Pumpkin Mousse

A thick layer of creamy pumpkin mousse and a sprinkling of cinnamon graham crackers tops this delicious pumpkin cheesecake.  The combination of mousse and cheesecake turns out so light and creamy.  It makes ordinary pumpkin pie seem second class. 

Peaches & Cream

Homemade peach pie filling is baked right on top of my original cheesecake batter.  This “Peaches & Cream” combination is loaded with my  cinnamon crumb topping!  Enjoy every bite!!  

Pumpkin Swirl

Pumpkin pie + cheesecake = Pumpkin Swirl Cheesecake!  My original cheesecake batter is swirled with pumpkin batter and topped with dollops of whipped cream!  A perfect combination for Thanksgiving, or any day really!!

Caramel Apple Crumb

A fresh apple pie filling is baked right on top of an original cheesecake filling. The apples bake golden brown and keep enough crispness to contrast perfectly with the creamy cheesecake. Drizzle on a little caramel sauce, sprinkle with a cinnamon crumb topping and you’ve got a perfect autumn cheesecake!!

Chocolate Chip Cookie Dough

Chocolate Chip Cookie Dough is one of the most popular ice cream flavors.  It also turns out to make an equally popular cheesecake flavor.  Cookie dough chunks are baked right in the cheesecake on a brownie shortbread crust.  It’s covered in a whipped chocolate ganache with homemade chocolate chip cookies on top!

White Chocolate Raspberry

A raspberry ribbon runs through the center of this luscious white chocolate cheesecake with extra raspberry swirls and a white chocolate web on top. I use a shortbread crust to compliment the rich flavors of the filling! This is my second most requested cheesecake (next to the Neapolitan).

Brownie Swirl

This is a brownie lovers dream!  I start with a brownie crust, add mini bites of brownie to the batter, and swirl the top with chocolate.  Oh, and add a ring of nuts (your choice) around the edge just for fun.

Neapolitan

Not your typical Neapolitan!  This is one of my most requested creations!  It is definitely one of my personal top three favorite cheesecakes!  I make this with a brownie shortbread crust.  The three layers consist of chocolate, white chocolate and raspberry.  I know traditional Neapolitan uses vanilla and strawberry but those flavors turn out rather bland in a cheesecake.  Instead, the white chocolate and raspberry layers give this an extra special flavor.  Plus the chocolate shell drizzled with white chocolate on top!  What’s not to love?

Triple Decker Cheesecake

What do you get when you put a cheesecake inside a cake? An addiction!! Literally, these cakes are so good you just have to have another piece. I make an original New York cheesecake first. Then I bake two homemade traditional cake layers. The cheesecake layer is then sandwiched between the cake layers with delicious homemade frosting! Each cake takes quite a bit more time to make but is worth every minute! Check out the varieties I’ve made so far! More to come in the near future!! Simple Pleasures

Sometimes the simple things make us the happiest!  A smile, a hug, or just five minutes of peace can make your day so much better!  The same is true with cheesecake.  A piece of smooth New York style cheesecake is unbeatable.  Make that a piece of cheesecake AND five minutes of peace and you’re close to a miracle! I make this cheesecake with either a plain shortbread crust or a brownie shortbread crust.  I have to say, the brownie shortbread crust is my all time favorite!!!  This cheesecake is perfect without any extra toppings.  However, a little raspberry sauce brings a whole new dimension to each slice.  

Candy Bar Blast

Wow! There is a little bit of heaven in every slice of this cheesecake!! Start with a milk chocolate bar in the cheesecake filling, pick your favorite candy bars to cover the whipped chocolate ganache and you have a cheesecake you just can’t resist! This cheesecake has turned out a little different each time I’ve made it! By simply choosing a different variety of candy bars to use for the topping you create your own custom made cheesecake! Not to mention the candy bar pieces inside. I’ve made this with english toffee pieces layered between the crust and the filling but the skies the limit! Next time I would like to try peanut butter cups, or maybe dark chocolate nuggets! Mmmmmm!!

My Favorite Things

I am a woman of many interests but baking is my favorite hobby. Desserts are at the top of my list next to breads. You just can't beat the taste and smell of homemade bread coming out of the oven. Well . . . actually you can. Many will agree that cheesecake is just too big of a temptation to resist. Half the fun for me is creating the masterpiece to be shared with friends and family! Each member of my family chooses a cheesecake for me to create for his/her birthday. This ritual has given me the opportunity to try new recipes and discover some of my favorites.
