It’s been almost a year since I last updated my blog and what a busy year it has been!  The birth of our fourth child, Katie, has brought the most change and has kept me the busiest!  But despite the busy schedules around here I have not lost my obsession with baking!  The past year wouldn’t be complete without the addition of a few new flavors to my cheesecake collection.

Last spring I wanted a cheesecake to welcome in summer time!  One thing I love to enjoy on a warm summer day is a cold glass of raspberry lemonade.  At first I wasn’t sure that a raspberry lemonade cheesecake would turn out quite right.  The first one I made was a little on the tart side but with a little tweak to the ingredients the second attempt turned out incredible!  I have to say that this is now one of my favorite cheesecakes!

The second cheesecake flavor was a simple addition!  My chocolate chip cheesecake is made with a chocolate shortbread crust, chocolate chips in the filling, and a chocolate ganache topping.  This cheesecake has the perfect balance of cheesecake to chocolate!

The third cheesecake flavor is a German Chocolate cheesecake.  Toasted coconut and German Chocolate chunks are sandwiched between the chocolate crust and regular cheesecake filling.  I add a layer of toasted coconut to top it off.  A good chocolate fix without being too rich!  Again, simple but delicious.

Of course there was one thing I missed during the last year and that was pictures.  I did not get any pictures of my new cheesecakes so clearly I need to make them again so I can get some pictures for my blog!
